When we were checking out of our hotel in Florence, the hotelier asked us where we were off to next and when we said, "Lucca," he looked at us intensely and said, "You must have the lardo!" I didn't know what this was, but I was already sold.
Turns out it is another specialty of Lucca -- salted, cured pork fat, shown here with accoutrements, but more frequently served plain. Delightful.
