Everywhere we went in Lucca, the menus proclaimed that this dish or that dish was a specialty of Lucca. Turns out that Lucca was once one of the very few prosperous towns in the region which meant that they had time and resources to experiment and come up with interesting dishes, many of which we sampled.
One of them was torta salata, a cold frittata-like cake stuffed with veggies. It was a little bland for my taste, but luckily this did not bode ill for the other Lucchese specilaties we would sample.
