Roasted bone marrow with parsley salad. The bone marrow was served bubbling and crusty in the bone with a few hearty pieces of toast and a parsley salad. It was delicious-- and beyond rich. The full fatty goodness of the dish gave it its intense flavor, but also sank to the bottom of my stomach. The parsley salad, as one would expect, was a nice counterpoint to the pure fat of the marrow and the bread soaked it all up. It was a gorgeous, indulgent dish which lived up to its reputation. I especially loved the special tool I was given to scrape out the marrow; I need one of those at home. Still, I felt like I'd been hot oil wrestling by the end of it.
